Prep Time: 10 min | Cook Time: 30 min | Serves: 4-6
Ingredients:
- 1 box jumbo shells
- 1 package 44th Street Pulled Pork
- 1/2 cup water
- 2 cups of your favourite grated cheese – try old Cheddar or Monterey Jack
- Optional Garnish: sautéed onions
Directions:
- Preheat oven to 350°F.
- Reserve ½ cup of sauce from the 44th Street Pulled Pork
- Bring a large pot of generously salted water to a boil.
- Add the jumbo shells and cook just until they are just getting soft – you want them slightly pliable but not too soft or they’ll tear when you stuff them. (If you have oven-ready shells you can skip this step!)
- Drain and rinse with cold water until they are cool enough to touch.
- Use a fork to toss together the pulled pork sauce in the package.
- Prepare a 9-inch by 13-inch baking pan with non-stick cooking spray.
- Fill shells until they are stuffed then place them, open side up, in pan.
- Mix reserved sauce with water and pour over the shells.
- Cover pan with foil and bake for 30 minutes.
- Remove the foil, sprinkle the cheese over the top and continue baking 15 minutes or until the cheese is bubbly.
