44th Street Mini Chili Potato Skins Recipe

44th Street Mini Chili Potato Skins Recipe

Ingredients: 
  •  1 package 44th Street Certified Angus Beef® Texas Style Steak Chili
  •  12 mini white or red potatoes (pre boiled or microwaved until tender)
  •  8 slices of bacon (crumbled)
  •  1 cup cheddar cheese
  •  ½ cup sour cream (optional)
  •  4 green onions (optional)
Directions:
  1.  Preheat oven to 425 degrees
  2.  Cut cooled potatoes in half and scoop out inside leaving about ¼ " shell
  3.  Fill each cup with 1 tbsp of 44th Street Angus Beef® Texas Style Chili
  4.  Top with cheddar cheese and crumbled bacon
  5.  Bake in oven for 10 min or until all items are heated through
  6.  Once removed from oven top each with a dollop of sour cream and chopped green onions
Tip: These can be made in advance and left in the fridge for up to 3 days before serving.
