Beef Stroganoff Loaded with Veggies
I use the 44th Street pot roast to make an excellent quick beef stroganoff!
2 tablespoons of olive oil
1 cup of sour cream
2 cup sliced mushrooms of choice
1 cup diced fresh tomatoes
1 cup diced onions
1 cup chopped celery
salt and pepper to taste, a bit of paprika for more taste
pot roast  - cut into bite-size pieces.
parsley for decoration
2 cups of rice cooked with chopped onion and green pepper
 
Chop and fry mushrooms of choice, fresh tomatoes, onions, and celery. Season to taste. Add chopped pot roast and sour cream.Combine and keep warm. 
Serve over rice and decorate with fresh parsley... Smile

Serve the beef stroganoff over the cooked rice. they think you have spent all day.
